For his new book Back of the House: The Secret Life of a Restaurant psychologist Scott Haas spent a year and a half at acclaimed Boston restaurant Craigie on Main, where chef Tony Maws gave him free reign to observe all the goings on for the all-access look at the psychology of a restaurant.
