In this great excerpt from The Mind Of A Chef, chefs David Chang and Sean Brock make the classic Hot Brown sandwich — a lush open-face sandwich that layers sliced turkey, Mornay sauce, bacon, and tomatoes atop thick-cut toast. The Hot Brown was invented in Louisville's Brown Hotel in 1926 by the hotel's chef at the time, Fred K. Schmidt and is a key part of of Derby day celebrations.
