The theme at this year's MAD symposium was Guts. Italian butcher Dario Cecchini of Antica Macelleria Cecchini, took this to heart, beginning his presentation by swiftly slicing open a pig and allowing the innards to spill out, while discussing the importance of craft, of love and of respecting the animals we consume.
