Avocado & Edamame Crush on Toast with High Oleic Soy Oil Popped Seeds & Sunny-side Egg

Step 1
2 • Avocado • cut in 1/2
4 oz • Edamame
2 oz • High Oleic Soy Oil
1 tbsp • Lemon Juice
Kosher salt & pepper • to taste
4 slice • Multigrain Bread
Scoop the avocado into a bowl. Add the edamame and crush with a fork. Season to taste with lemon juice, salt and pepper. Toast or grill the bread and spoon avocado crush on each slice.
Step 2
1/4 cup • High Oleic Oil
1 tbsp • Garlic • finely chopped
1/4 cup • Mixed Seeds • Poppy, Sesame, Hemp, Flax, Chia, Black Sesame
1 tsp • Kosher Salt
1 tsp • Aleppo Pepper or chili flakes
4 • Fresh Farm Eggs
1/2 • Herbs • Mint,Parsley, Cilantro, Dill
In a non-stick skillet, heat the oil over medium heat. Add the garlic and stir until the garlic is golden brown. Add the seeds. When they begin to pop, add the salt & Aleppo and remove them and all but 2 tbsp. of oil to a small bowl. Fry the eggs sunny side up. Place an egg on top of each avocado toast. spoon some seeds and oil on top and garnish with the herbs. Serve immediately.
