Parsley-Shallot Butter

Step 1
2 lb • Butter, softened
4 oz • shallots, chopped
1 bottle • Parsley - chopped
2 tsp • salt
1. Combine all in a robot coupe until all ingredients are well mixed.

2. Form cylinders 1.5 inch wide and wrap in parchment paper and plastic wrap.

Freeze until needed for service.
