Chicken Sausage

1.5 lb • Chicken leg meat • ground
1 lb • Chicken breast • ground
4 oz • Red bell pepper • peeled, small dice
54 g • Shallots • peeled, minced
2 tbsp • Butter
6 oz • White wine
3 oz • Ginger juice
3 oz • Rice Vinegar
6 oz • Heavy cream
1 oz • Salt
0.50 oz • Pepper
Sugar to taste
2 tsp • Five spice
Season chicken and allow to sit for at least 4 hours, more is better.

Puree the chicken meat or in a food processor until smooth.

Sweat vegetables and spices in butter and create a reduction with the vinegar and wine to 1/2. Add the cream, bring to a simmer and chill quickly.

Fold this mixture into the chicken and chill until use.
