Lemon-Thyme Salmon

6 oz • Salmon filet
2 tbsp • Panko
1 tsp • Thyme
1 tsp • Lemon Zest
3 oz • Baby spinach
2 tbsp • Bacon - diced
2 tbsp • Roasted Corn
1 tbsp • Garlic Confit
1 tsp • Roasted Tomato Oil
Olive oil as needed
Salt and pepper as needed
1. Mix together the panko, zest, salt, pepper, and fresh thyme. Place on top of the salmon.

2. In a non stick pan, cook the salmon in olive oil with crust side down. Flip the salmon and finish in the oven.

3. Meanwhile, sauté the spinach, bacon, and corn. Season well.

4. Place the spinach on a heated dinner plate and top with salmon.

5. Garnish with garlic confit and tomato oil.
