Fruit Salad

Step 1
2 each • Pears
1 tbsp • Lemon juice
1 cup • Water
Split pear in either 1/2 or 1/4's depending on the size of the pear. Cut four tournes out of the pears and set aside in some lemon juice and water.
Step 2
2 tbsp • Butter - slightly softened
4 piece • ginger, crystalized
1 tbsp • Sugar
1 tbsp • Water
4 each • pears, tournes
Heat the pan, add the fat, ginger, water and sugar allow it to heat, the pears are then placed in the pan cook pears until they caramelize or have some color. Once they have reached desired color, place in small metal bowl with juices from poaching, cover and keep warm.
Step 3
2 oz • Honeydew melon
2 oz • Mango
2 oz • Papaya
2 oz • Strawberries
1 oz • Cucumber English
2 tsp • Basil - Fresh
1 tbsp • Lemon juice
1/2 tsp • Kosher salt
Peel/cut fruit and cucumber into medium dice. Mix in small metal bowl, with lemon juice salt and basil. Set aside in small metal bowl.
Step 4
4 serving • Fruit salad mixture
4 serving • Pear tounes
Split fruit salad into 4 equal ramekins and top with pear tourne, then drizzle poaching juice on all 4 fruit bowls,place on plate.
