Potato Blue gratin

|1 each • Russet Potato|
|1 each • Sweet potatoes|
|1 each • Granny Smith apples|
Peel potatoes and shred apple and potatoes together. Rinse and drain.
|• Lemon juice|
|• Lemon zest|
Add lemon juice and zest to potatoes.
|1 tbsp • Parsley - chopped|
|2 oz • Blue cheese - crumbled|
Mix potatoes with parsley and blue cheese.
|1 oz • Soybean oil|
Add oil to pan and allow to heat, then add potato to brown on one side. Flip potato to brown on the other side. Salt and pepper to taste. Cut into 4 equal quarters and cut.
