Yukon Potato-Tortilla Hash

10 lb • Yukon Gold Potatoes • diced 1/2 inch
2 lb • onions • diced 1/2 inch
1 lb • red peppers • diced 1/2 inch
50 each • Corn tortillas • diced 1/2 inch
2 bunch • Cilantro • cleaned and chopped
1 lb • Butter
• salt/pepper
3 tbsp • smoked paprika
3 tbsp • Chili powder
1. Sauté the peppers and onions until tender.

2. Deep fry the potatoes at 350F until golden brown and fully cooked. Sprinkle with salt.

3. Deep fry the corn tortillas in batches so that they do not stick together.

4. At pickup, sauté the potatoes, onions, and red peppers in butter (in batches).

5. At the end of the cooking process, fold in the tortillas, paprika, chili powder, and cilantro. Season to taste.
