Country Irish Stew

Due to owner Buzzy O'Keeffe's Irish lineage, St. Patrick's Day is a big celebration at The Water Club in New York City. Chef Aaron Bashy serves a Hiberno-centric menu, including this Country Irish Stew.

2 lb • Short Rib Meat • 1 inch dice
1/2 cup • Onion
1/4 cup • Carrot • diced
1 cup • Quick cooking barley
1/2 cup • Parsnip
3 • Potatoes • diced
1 cup • Red wine
4 cups • Beef broth
1 tbsp • Tomato paste
4 cups • Chicken stock
2 • Bay leaves
1 tbsp • Dried oregano
1 tbsp • Garlic
In a pot, lightly brown the meat.

Add the garlic, carrots, potatoes, and parsnip and cook until softened.

Add the tomato paste and the beef broth.

Add the barley and dry spices.

Cover and simmer for 1 hour. Check the meat every 15 minutes, each time adding a quarter of the chicken stock to keep the meat moist, until all of the stock has been incorporated.
