Campari Bitter Macaroons

Step 1
• Campari Jelly
1 lb • Coconut flakes
3 • Egg whites
1 1/2 cups • Granulated sugar
1 tsp • Almond extract
1 tsp • Aged Rum
• Orange segments
• Flaked sea salt
Beat egg whites and sugar, add coconut flakes, rum and almond extract. Scoop and mold with tablespoon. Bake at 350 for 12-15 minutes. Scoop Campari Jelly (see below) onto macaroons, top with an orange segment and flaked sea salt.
Step 2
1/2 cup • Campari
1 pt • Strawberries
1/2 cup • Sugar
1 • Lemon • juice and zest
1/4 cup • Water
1/4 cup • Cornstarch
For Campari jelly: Clean and quarter strawberries, combine with 1/4 cup Campari, 1/2 cup sugar and lemon juice and zest. Simmer on low for 10 minutes. Strain out the strawberries and reserve for other use. Add cup of Campari. Bring to a boil over medium heat. Add a mixture of water and cup cornstarch, whisk well, then whisk in to Campari mixture until thickened. Let cool.
