Barley Soup with Smoked Spare Ribs

This hearty soup is especially tasty when prepared a day in advance and reheated.

Step 1
8 cup • Water • cold
1 lb • Smoked spare ribs
1 piece • Onion • diced
4 clove • Garlic • slices
2 leaf • Bay
1 tbsp • Juniper berries • dried
1.5 tbsp • White beans • dried
Pour 8 cups of cold water into a stockpot.

Add to the water:

1 lb of smoked spare ribs

1 diced onion

4 cloves of garlic in slices

2 bay leaves

1 tbsp. of dried juniper berries

Bring to a boil and cook for 20 minutes.

Add 1 and a half tbsp of dried white beans soaked overnight in water, and cook for another 45 minutes.
Step 2
7 tbsp • Barley • soaked overnight
1 piece • Carrot
1 piece • Parsnip
1/2 piece • Root of celery
1 tbsp • Marjoram
Add into the soup:

7 tbsp of barley soaked overnight

1 carrot cut in cubes

1 parsnip cut in cubes

root of celery cut in cubes

1 tbsp. of marjoram

Cook for another 30 minutes.
Step 3
• Fresh ground pepper
2 tbsp • Rowanberry vinegar
Take out the spare ribs.

Remove the meat.

Cut it into small pieces and return to the soup.

Season the soup with salt and fresh ground pepper.

Add 2 tbsp. of Rowanberry Vinegar.
