Step 1
300 g • Sugar
300 g • Water
Dissolve sugar in water over medium heat.
Step 2
300 g • Lime Juice
50 g • Egg White Powder
Blend Egg White Powder and lime juice until fully emulsified.
Step 3
.24 g • Xanthan Gum
Add Xanthan Gum to sugar syrup, emulsifying continuously with a hand blender, scraping sides of the pot. Bring to a rolling boil and remove from heat.
Step 4
Allow to cool and emulsify syrup with lime juice mixture.

Pass through chinois.
