Mount Gay Black Barrel’s Old Bajan

A refreshing, yet warming autumn cocktail. The oak and molasses flavors of Black Barrel give way to softer ripe banana and stewed fruit flavors as the honey and mint soften and open the cocktail. A splash of Piper gives a bright finish, creating a vibrant fall cocktail. A cross between an Old Cuban Cocktail and a Bee's Knees, the Old Bajan represents the bright and effervescent character of the Bajans.

Step 1
1 1/2 oz • Mount Gay Black Barrel Rum
1 oz • Honey Syrup
3/4 oz • Fresh lemon juice
1 dash • Orange bitters
• Allspice
Combine all ingredients into a cocktail shaker. Stir briskly, mixing liquids to an even consistency. Fill shaker with ice and shake until frost forms. Fine-strain into a coup glass and garnish with an orange peel and a dusting of all spice.
