Blood Orange Gelee

Step 1
7.8 • Agar Agar
500 g • Water
500 g • Sugar
Heat water to dissolve sugar.

Add Agar Agar and emulsify well with a hand blender,

scraping sides of pot.

Bring to a rolling boil and remove from heat.
Step 2
500 g • Blood Orange Juice
Emulsify with blood orange juice.

Set in a shallow tray in a cold environment. (Do not freeze).
