Frothy Bean Soup

Step 1
1 cup • White beans
2 clove • Garlic • halved
1 piece • Carrot
1 sprig • Rosemary
Soak 1 cup white beans over night.

Combine it with:

2 halved garlic cloves

1 carrot (cut into pieces)

1 rosemary

Cook in salted water until the beans are tender.
Step 2
4 piece • Shallot
2 tbsp • Sunflower seed oil
Cut 4 shallots into stripes

Heat 2 tbsp. of sunflower seed oil in a stockpot, and glace for a few minutes.
Step 3
2 cup • Chicken stock
0.5 cup • Heavy cream
2 tbsp • Butter
2 tbsp • Bouvier Trockenbeerenauslese vinegar
• Ground white pepper

2 cups of chicken stock into the pot.

cup heavy cream.

2 tbsp. butter.

Blend everything together with a hand mixer, be careful not to squash the beans too much.

Season with:

2 tbsp. of Bouvier Trockenbeerenauslese vinegar

Ground white pepper
