Chocolate-Guinness Cake with Bailey’s Cream Cheese Frosting

Step 1
1 lb • Sugar
4 oz • Vegetable oil
2 • Eggs
4 oz • Low-fat sour cream
1 1/2 tsp • Vanilla extract
8 oz • All-purpose flour
1 1/2 tsp • Baking soda
1 1/2 tsp • Kosher salt
16 oz • Guinness
8 oz • Cocoa powder
In a medium bowl, mix the Guinness and the cocoa until smooth. In a large bowl, whisk together the sugar, oil and eggs until smooth. Add the sour cream and vanilla and whisk to combine. Fold in the flour, baking soda and salt until just incorporated. You don’t want any lumps. Mix in the Guinness and cocoa. Pour batter into to two parchment lined and spray coated 9-inch cake pans. Bake at 350 for about 35 to 45 minutes, until a cake tester comes out clean. Remove from the oven and cool.
Step 2
16 oz • Unsalted butter • room temperature
16 oz • Low-fat cream cheese
12 oz • Powdered sugar
3 tbsp • Bailey’s Irish Cream
Beat all ingredients in a stand mixer until smooth. Place 1 round of cake on a cake stand and cover the top with 1/3 of the frosting. Place second layer on top and cover top and sides with the remaining frosting. Decorate as desired and serve chilled.
