Carnegie Deli’s Matzoh Brei Recipe

2 •  sheets of matzoh
2 • large eggs
3 tbsp • Butter
• Salt and pepper to taste
1/2 cup • Water
Break matzoh into 1 inch pieces and place in a mixing bowl. Cover with 1/2 cup hot water. Toss the matzoh until it is soft, and then drain remaining water from bowl. In another mixing bowl, beat the eggs, salt, and pepper. Pour the egg mixture over the matzoh and mix gently with a fork. Heat butter in a large skillet over medium-high heat, until melted. Add matzoh mixture to skillet and fry, about 1 minute per side, until matzoh has begun to crisp. Serve with strawberry jam or applesauce.
