Tai Basil Cocktail

What's a celebration without a cocktail? In order to properly honor Earth Day, the Royalton in New York City has created four locavore, farm-to-bar cocktails which will do good while tasting good —$2 from the sale of each of the Earth Day drinks will be donated to Grow NYC, which runs the city's Greenmarkets. Bartenders from Royalton foraged their way through the flagship Greenmarket in Union Square collecting fruit, vegetables, herbs, juices and jams that they used to develop the Earth Day cocktail menu, using products made from local purveyors like Berkshire Berries Onion Jam in the Market Gibson and Red Jacket Orchard’s Apricot Stomp in the Tai Basil cocktail. The Earth Day promotion will run April 16th – April 27th and the menus will be printed on seed paper that guest can take home and use to plant herbs and flowers at home, providing another way of giving back to the environment. We can drink to that!

Step 1
2 oz • Denizen rum
1/2 oz • Red Jacket Orchard’s Apricot Stomp (or other 100% fruit nectar)
4 • Basil leaves
1/2 oz • Orgeat syrup
1/2 oz • Lime juice
Pour rum, apricot stomp, basil, orgeat, and lime juice into a cocktail shaker. Shake and double strain into tiki glass. Add crushed ice. Serve.
