Gorgonzola Souffle

Step 1
1 lb • Butter
1 lb • Flour
1/2 pt • Shallots • diced
• 
Melt butter into saucepot, add in shallots to sweat. Add in flour to make a roux. Cook out 10 minutes.
Step 2
3 qt • Milk
• Thyme Bayleaf Sachet
Add in milk and sachet, cook out 30 minutes.
Step 3
30 • Egg yolks • seperated
3 lb • Crumbled Gorgonzola • crumbled
Temper in yolks and gorgonzola, adjust seasoning. Let cool overnight.
Step 4
2 qt • Panko
30 • Egg whites • whipped to firm peaks
Fold in Panko and egg whites. Fill sprayed 2oz molds. Bake at 350 degrees F for 20 minutes.
