Add to mixture and work into a dough. Refrigerate 30 min. On a surface dusted with soy flour, roll half the dough to 1/8 in., and line a pan with it. For a double-crusted pie, roll out the other half, and chill flat on a pan. Refrigerate until cold. Heat oven to 400°. Add pie filling, and top with second crust if desired; cut vent holes. Bake until filling bubbles and crust is golden and crisp.
