Gluten-Free Pie Dough 2

2 crust

Step 1
3/4 cup • White rice flour
1/4 cup • Potato starch
1/2 cup • Tapioca starch
1/2 cup • Soy flour
1 tsp • Whey powder
Combine.
Step 2
1 stick 2 tsp • Unsalted butter • chop
Using hands, cut butter into dry ingredients until it's evenly distributed and the mixture clumps when squeezed.
Step 3
1/2 cup • Cold water
Add to mixture and work into a dough. Refrigerate 30 min. On a surface dusted with soy flour, roll half the dough to 1/8 in., and line a pan with it. For a double-crusted pie, roll out the other half, and chill flat on a pan. Refrigerate until cold. Heat oven to 400. Add pie filling, and top with second crust if desired; cut vent holes. Bake until filling bubbles and crust is golden and crisp.
