Step 1
1/4 lb • Bacon
Chop bacon and cook over moderate heat, stirring, until golden and crisp. Drain on paper towels.
Step 2
12 oz • Beer
3 dz • Clams, cherrystone • rinsed and purged
Steam clams in beer until just done, drain clams reserving juice. Chop clams and chill
Step 3
1/4 cup • Sour cream
1/3 cup • Red bell pepper • finely chopped
3 each • Scallions • finely chopped
2 tbsp • Basil - Fresh • finely chopped
1 tsp • Horseradish
1 tsp • Lemon juice, fresh
3/4 tsp • Worcestershire sauce
Thoroughly mix all ingredients. Whisk in 2 Tablespoons reserved clam juice, clams, and bacon.
