Artichoke Brandade

Step 1
4 lb • Fresh salted cod
3 each • Bay leaf
2 each • Thyme sprigs
1 lb • Potatoes, Yukon Gold • medium diced
4.5 oz • Garlic cloves, whole
• Water • to cover
In a sauce pot: Place Cod, Potatoes, Garlic cloves, bay leaf and thyme ( tied together) Cover with water - and simmer until potatoes and cod are cooked Drain ( reserve some of the water ) Let cool and prepare step 2
Step 2
.5 bag • Frozen artichokes
1 pt • Artichoke oil
1 pt • Heavy cream
Black pepper to taste
1 tsp • Lemon zest
Defrost artichokes- Saute in artichoke oil to soften - Let cool In robo coupe- Add in cod mixture and artichokes - blend to a smooth puree. Add in heavy cream and more artichoke oil if needed, and lemon zest. Blend to a smooth consistency. Add in pepper as needed.
