Thai Tapioca Pudding

Step 1
1 cup • Small pearl tapioca
8 cup • Water • divided use (6 & 2)
3 cup • Coconut milk
1 • Sugar
1/2 tsp • Salt
Rinse tapioca in cool tap water and drain.

Over medium heat, combine tapioca with 6 cups of water in a saucepan and bring to a boil. Cook for 5 minutes, stirring constantly. Drain tapioca and rinse.

In a clean saucepan, combine the coconut milk and 2 cups of the water.

Add the tapioca to milk mixture. Bring the mixture to a boil over medium heat, stirring constantly.

Add the sugar and salt, and stir until the sugar is dissolved.

Remove from heat. Taste the mixture at this point and if needed, add more sugar or salt to taste. Let mixture sit for 25 minutes.

Spoon the mixture into 8 separate dessert glasses. Serve warm or chilled. (Can be topped with berries, melon or any type of fresh fruit you choose)
