Roasted Vegetables

Step 1
• Assorted vegetables (your choice)
1 lb • Red peppers • Thick Strips
1 lb • Yellow squash • Cut 1/2 moon
1 lb • Zucchini • Cut 1/2 moon
• Cauliflower • Thick florets
• Brocollni • Long stems cut after cook
Preheat oven to 350F.

Cut and combine vegetables in bowl.
Step 2
Extra-virgin olive oil as needed
Kosher Salt to taste
Ground black pepper to taste
1 tsp • Granulated garlic
1 tbsp • Italian parsley (flat-leaf) • chopped
Toss vegetable with oil, salt (Diamond Crystal), pepper, garlic

Place vegetables in roasting pan and cook at 370F until tender and golden brown,

Arrange on platter and finish with fresh parsley.
