Grilled Vegetables

8 1/2 fl oz • Extra-virgin olive oil
2 fl oz • Soy sauce
2 1/2 tbsp • Lemon rind
• Lemon juice
1/2 oz • Garlic • Chopped Fine
1/2 tsp • Fennel seeds • Toasted and ground
Kosher salt as needed
Ground black pepper as needed
For the marinade: Combine all ingredients and blend well
Step 2
2 1/2 lb • Assorted Vegetables (zucchini, squash, eggplant, asparagus, peppers, red onions etc.) • trimmed
2 tbsp • Fresh basil,Thyme, parsley, oregano • Chopped
Preheat grill.

Cut vegetables and grill until tender and well marked. Once cooked, paint on marinate as they cool to soak up the flavor, garnish with your desired chopped fresh herbs such as thyme, oregano, Italian parsley, basil or a combination.

Add more marinate if dry
