Rocotto Escabeche

Peruvian pickled fish sauce

May be used to cook fish or shellfish

May be used as a garnish sauce for fried fish

May be used to pickle vegetables

3 oz • Oilve oil
4 clove • Garlic • fine sliced
1 oz • Rocotto chile • minced
4 oz • Red onion • fine sliced
• Black pepper
• Cumin • cracked
• Oregano, fresh • finely chopped
4 oz • Red vinegar
2 g • Sea salt
4 oz • Water
3 oz • Agave
Bring all ingredients to boil

Chill and reserve for use
