Crab Cakes

Step 1
5 lb • Crabmeat-jumbo lump
2 tbsp • Chives • finely chopped
2 tbsp • Parsley • finely chopped
4 tbsp • Old Bay seasoning
1.25 lb • Potatoes • cooked and mashed
Pick crab meat to remove shells. Add in chives, parsley, Old Bay, and potatoes. Mix gently to incorporate.
Step 2
6 each • Egg whites
2 tbsp • White wine
1 tbsp • Lemon juice, fresh
Whip to stiff peaks. Fold into crab mixture.
Step 3
1 tbsp • Dijon mustard
1 tbsp • Thyme - fresh • chopped
Fold in. Mold into 3 oz crab cakes.
Step 4
2 each • Egg whites • whisked
1 tbsp • Chives • chopped
Panko as needed
Coating: combine chives with panko bread crumbs. Dip crab cakes into egg whites and then into panko-chive mix. Saute in a non-stick pan sprayed with vegetable spray to a crisp golden brown.
