Chili Soup with Beans

Step 1
2 tbsp • Olive oil
1/2 lb • Ground beef
2 each • Onions, chopped
1 each • Green bell pepper
2 rib • Celery
2 each • Garlic cloves
2 tsp • Ground cumin
1.5 tbsp • Chili powder, ancho
Heat oil and add ground beef to cook. Stir until well browned. Stir in onions, green pepper, celery, and garlic. Simmer, stirring from time to time, until tender and transparent. Stir in cumin and chili powder. Cook 2 minutes.

**The Oaxaca Music spice recipe is excellent to season this soup.
Step 2
2 cup • Kidney beans, soaked over night, drained
6 cup • Beef broth
1 can • Crushed tomatoes, canned
Salt and Pepper to taste
Hot sauce to taste
Stir in broth and beans. Cover and reduce heat. Simmer one hour until beans are tender. Stir in tomatoes and season well with salt, pepper, and hot sauce. Cover, and simmer an additional 20-25 minutes.
Step 3
2 each • Green onions • thinly sliced
Cheddar cheese as needed • grated
Sour cream as needed
Garnish with green onions, cheddar cheese, and a dollop of sour cream.
