Filled Cream Cheese Cookies

This is a traditional cream cheese/butter dough. Cookies can be make is various shapes with your choice of fillings. Any flavor of preserves will work, as well as a poppy filling. This recipe makes approximately 4 dozen cookies, but depends on shapes and sizes that you make.

Step 1
1 lb • butter • softened
1 lb • cream cheese • softened
Blend softened butter and cream cheese in large mixer bowl.
Step 2
3 1/2 cups • Flour
Gradually add flour into butter/cream cheese mixture until all incorporated and sticks together.

With floured hands, form dough into small balls (the size of small ping pong balls).

Chill balls for 1 1/2 hours.
Step 3
4 cups • Confectioner's sugar • some for rolling dough & some for dusting
1 • Seedless raspberry preserves
1 • Apricot preserves
Roll out each ball into an oblong shape in confectioner's sugar. (make sure to keep replenishing sugar to prevent dough sticking to rolling pin and surface).

Towards top of each cookies, add a 1/2 teaspoon of preserves. Roll dough towards you into cigar shape and fold left and right edge in to seal. (be sure not to over stuff with preserves, because cookies will break open when cooking).

You can also form into any shape you choose.
Step 4
Bake on ungreased cookie sheet in 350F oven for about 15 minutes or until golden brown.

Cool on rack. When cooled, dust with confectioner's sugar.
