Candied Sweet Potatoes

A Thanksgiving tradition. More like dessert than a side dish, But so worth the calories

6 each • Sweet potatoes
1/2 cup • Brown sugar
1/4 cup • Molasses
1/4 cup • Honey
1/2 cup • white sugar
6 oz • Butter
2 each • Shallots • diced
1 tsp • Coriander - ground
1 tsp • Cinnamon
1/2 cup • orange juice
Salt and Pepper to taste
16 oz • Marshmallows
Wash, peel medium sized sweet potato. Cut into 1 1/2 inch cubes

In a sauce pan place all the other ingredients and bring to a boil to incorporate together. Pour over sweet potatoes and roast. Cook covered until 3/4 done. Uncover and finish cooking so sauce reduces to a nice syrup. Make sure you toss the potato in the syrup to coat. Once finished, cover with as many marshmallows as you like, place under the broiler to melt and slightly brown. Serve immediately.
