Crab Cakes II

Step 1
12 lb • Lump crabmeat
12 lb • Special crab
1 pt • Parsley - chopped • chop
1 qt • Egg yolks
5 qt • Panko
2 qt • Mayonnaise
1 pt • Lemon juice
1 cup • Lemon zest
1 pt • Chives • fine sliced
3/4 cup • Old Bay
1 pt • Dijon mustard
1/2 cup • Dry mustard
1/2 cup • Salt and Pepper Mix
Mix all ingredents together to make a dressing and fold into crabmeat mix. Carefully not to break up crab meat.
