Step 1
2 cup • Whole Wheat flour
1 1/2 tsp • Baking powder
2/3 tsp • Cinnamon
1/4 tsp • Baking soda
1/8 tsp • Nutmeg
Stir together dry ingredients.
Step 2
2 whole • Eggs
1 cup • Canola oil
2 tbsp • Applesauce
Combine, egg, oil and applesauce. Add dry ingredients to egg mixture, mix about 3 mins, scraping down sides and bottom of bowl.
Step 3
1.75 cup • Carrots • grated
Add to wet mixture.
Step 4
1.5 cup • Egg whites
1.5 cup • Honey
Whip eggwhites until medium firm. Fold into carrot mixture. Pour into round cake pan sprayed with vegetable spray and lined with parchment. Bake at 350, until cake tester comes out clean.

1/4 cup • Apple juice
Slice cake into 8 wedges. Place a wedge on plate. Garnish with Naturelle Bavarian Cream, reduced apple juice or similar garnishes of your choice.
