Step 1
48 oz • Chicken stock
1.5 oz • garlic • minced
1.5 oz • arrowroot
12 oz • white wine
3 oz • lemon
.75 oz • Balsamic vinegar
4.5 oz • olive oil
1.5 oz • anchovy
salt & pepper to taste
Bring chicken stock and garlic to a boil, simmer. Mix slurry adding arrowroot and white wine, thicken stock and chill. Add remaining ingredients, mix well.
