Clam Fritter

Step 1
1 cup • All purpose flour
1/2 tsp • Baking powder
1/4 tsp • kosher salt
1/8 cup • sugar
1 whole • eggs
1/2 cup • stout beer
2 oz • Extra-virgin olive oil
1 tsp • fresh thyme • finely chopped
1 tsp • fresh sage • finely chopped
3 oz • florida hard shell clam meat • chopped
3 cup • Duck fat
Into a medium-mixing bowl, sift together the flour, baking powder, salt and sugar.

Whisk in the egg and extra virgin olive oil until incorporated. Add beer and herbs and whisk until smooth. Fold in the clam meat; cover mixture with plastic and reserve for service.

At time of service, in a 2-quart sauce pot, heat 3 cups of duck fat to 350 degrees. Using a teaspoon drop 12 individual fritters into hot fat. Cook through until golden brown. Remove from fat and place onto paper towel to drain.
