Step 1
6 qt • Milk
3 lb • Sugar
Heat together over low heat to 170 f.
Step 2
44 • Egg yolks
46 • Eggs
Beat together, then liaison into heated milk mixture. Whisk constantly until thickened. Remove from heat.
Step 3
Vanilla to taste
Add to custard.
