|5 lb • Quality apple-smoked bacon • diced small|
|3 whole • Shallots • chopped|
|3 cup • Apple sauce or puree|
|1 qt • Apple cider vinegar|
|3 whole • Cinnamon sticks|
|1 qt • Apple cider|
|2 qt • Grape seed oil|
|Honey as needed • usually ~2 small jars|
|Tarragon to taste|
|Salt and pepper to taste|
**Freeze bacon in stacks prior to dicing.
Render bacon in sauce pot, when light brown add shallots. Cook until soft. Add puree and vinegar, mix well. Add cinnamon sticks, simmer 15 minutes. Remove sticks, blend in oil, honey and herbs. Adjust seasonings.
