Pecan Diamonds

1/2 sheet
Step 1
2 lb • Butter
12 oz • Sugar
1.5 lb • Brown sugar
Boil butter, sugar, brown sugar 6-8 minutes.
Step 2
1 lb • Honey
Add in honey, boil 3 min. Remove from heat.
Step 3
3 lb • Pecans
6 oz • Cream
Add in pecans, then cream.
Step 4
• Shell • Pie crust or shortbread
Pour into shell-can either be pie crust pre-baked for 10 minutes or short dough blind baked with a little color then cooled- and place in 350°F for 25 minutes or until liquid boils for about 5 minutes. Take out and let cool and set overnight before cutting.
