Mansahari Mirchi Soup - Mulligatawny Soup

Step 1
16 each • Fresh Chiles
2 tbsp • Coriander - ground
4 tsp • Tumeric
1.5 tsp • Cumin powder
1 tsp • Nutmeg
.5 tsp • Cloves-ground
.5 oz • Black peppercorns-ground
4 tsp • Ginger root-grated
10 each • Garlic cloves
Grind all spices into a fine paste.
Step 2
1 oz • Ghee
4 each • Onions • chopped
2 lb • Mutton/Lamb • 1/3" diced
Saute onions until golden brown. Add spice paste and mutton meat and saute for an additional 5 minutes.
Step 3
5 tsp • Salt
6 oz • Tomato paste
1 gal • White stock
Add salt, tomato paste, and stock and simmer until the meat is 80% cooked.
Step 4
4 each • Carrots-large • 1/4" dice
4 each • Apples-large • 1/4" dice
Add carrots and apples. Simmer soup until everything is tender.
