|1 each • Vanilla beans • split and scrape|
|1 lb • Butter|
|10 oz • Pineapple juice|
Coat the prepared pineapple "loins" with sugar.
Melt the butter in a vessel large enough to lay all pineapple in one layer with room to spare.
Coat the pineapple with the melted butter and roast at 350 f turning and basting frequently. When the pineapple begins to caramelize, add the vanilla bean and the scrapings, allow the whole to cook five minutes more, then remove the fruit from the pan, cool and reserve.
Deglaze the pan with the pineapple juice and reserve.
Pour the juice over the pineapple and serve.
