Fried Scallops

2 cups • All-purpose flour
3/4 tsp • Salt
1 tsp • Freshly ground pepper
1 • Egg • beaten
1 tbsp • Water
1 cup • Bread crumbs or Panko
20 • Scallops
• Oil • for frying
Combine flour, salt and pepper in a medium bowl.

Mix egg and water in a separate medium bowl.

Place bread crumbs or Panko on a plate or tray.

First dredge the scallops in the flour mixture, then dip in the egg mixture, finishing up by dredging in the bread crumbs.

Place the coated scallops on a plate or tray, cover with cling film and chill for 30 minutes.

Pour oil in heavy saucepan and heat to 375 degrees. Fry scallops in batches, about 2 minutes per side or until golden brown.

Drain on paper towels, serve hot with with lemon wedges.
