Cream of Mushroom Soup

Step 1
1/4 lb • Mushrooms
1/4 cup • Butter
2 tbsp • All purpose flour
1 qt • Milk • scalded
Kosher salt to taste
Cayenne pepper to taste
Clean and chop mushrooms.

Saute mushrooms in butter over medium heat in a heavy saucepan for 5 minutes.

Stir in flour; reduce heat to medium low, while stirring constantly for 1 minute. Add milk slowly and cook for approximately 5 minutes or until soup thickens.

Add seasonings and puree if desired for a smoother consistency.
