|2 qt • Heavy Cream|
|1.5 lb • Butter|
|1.5 lb • Flour|
|6 lb • Cheese Blend|
|1 qt • Grated Parmesan Cheese|
|1 tsp • White Pepper|
|1 tsp • Paprika|
|2 tsp • Granulated Garlic|
|1 tbsp • Worcestershire Sauce|
Wrap Garni (see step 2) in cheesecloth, tie with string.
Place milk, cream and garni in a large saucepot bring to a boil. Reduce heat to medium low and simmer for 30min.
While milk is simmering melt butter in a small sauce pan. Slowly add flour to make roux. Cook on low for 10 min, constantly stirring.
Remove cheesecloth, squeeze excess liquid out, add roux to thicken. Fold in cheese mix, parmesan and cheese sauce, mix well.
Add spices and Worcestershire sauce. salt and pepper if needed.
