Three Bean and Green Olive Salad

Step 1
1/3 lb • Pinto beans, canned or dried • soaked and cooked
1/3 lb • Fresh Green beans • blanched
1/3 lb • Navy beans, canned or dried • soaked and cooked
2 cups • Green olives, pitted • rough chop
2 each • Red bell pepper • cut into long thin strips
4 1/2 fl oz • Extra-virgin olive oil
2 1/2 fl oz • Lemon juice
• Kosher salt • to taste
• Ground black pepper • to taste
Mix, taste and season with salt ( Diamond Crystal) and pepper.
Step 2
15 oz • Spinach
1 each • Lemon, zest of whole • blanched
2 tbsp • Parsley • chopped
Place on platter with a bed of spinach. Top with bean and olive mixture. Garnish with lemon zest and parsley.
