Buttermilk Plum Cobbler

Step 1
12 each • Plums-ripe-large
3/4 cup • Light brown sugar
5 tbsp • Unsalted butter
1/4 cup • Lemon juice
Preheat oven to 425 degrees. Butter a deep 9" x 7" oven proof dish. Wash, pit, and cut each plum into 8 pieces. Toss plums with brown sugar and spread in pan. Dot with butter. Sprinkle with lemon juice. Bake, uncovered, 25 minutes.

1 cup • AP flour
1 tsp • Baking powder
1/4 tsp • Baking soda
1/2 tsp • Salt
2 tbsp • Unsalted butter
3/4 cup • Buttermilk
Sift together dry ingredients. Cut in butter. Stir in buttermilk. Drop by large spoonfuls over the hot plums. Bake for 25 minutes, until puffed and lightly browned.
