Caramel Sauce

16 oz • Sugar
.5 tsp • Lemon juice
.25 tsp • Vinegar
2 cup • Heavy cream
3 oz • Butter • optional
In a large heavy-bottomed saucepan, over low heat, caramelize sugar with lemon juice and vinegar until golden.

Allow mixture to cool slightly, then stir in cream and cook until sauce is smooth. Add butter to finish.
