Baby Kale and Aged Parmesan with Mustard Dressing

Step 1
6 1/2 fl oz • Vegetable stock
2 fl oz • Dijon mustard
1/4 tsp • Kosher salt
1/4 tsp • Ground black pepper
2 fl oz • Extra-virgin olive oil
Dressing: Combine stock, mustard, salt and pepper. Whisk in oil.
Step 2
15 oz • Kale, washed, dried • Tear bite-size pieces
4 oz • Parmesan cheese - grated • Good aged
1 tbsp • Crushed Red Pepper
2 tbsp • Extra-virgin olive oil
Combine Kale, Parmesan, crushed red pepper and oil. Let macerate for about an hour or longer.
Step 3
2 1/2 oz • Walnuts or pecans, toasted • chopped
5 oz • Grapes - red seedless • Cut in 1/2
For prepare salad, Toss kale and grapes with dressing. Topped with chopped nuts. Can be used as a side for sandwich, salad with grains, grilled vegetables and grilled chicken breast, or used inside a sandwich and or wrap.
