Frijoles Refritos - Refried Beans

Step 1
3 lb • Pinto beans - dried
Soak beans for 12 hours.
Put beans into 4 times their volume of water.
Bring to a boil, cover and remove from heat.
Let stand one hour.
Uncover and cook until tender.
Step 2
1.5 cup • Bacon fat or lard
2 cup • Onions • finely chopped
6 clove • Garlic
8 each • Tomato concassé
Saute onions and garlic in fat, add tomatoes and cook for two minutes.
Step 3
Salt to taste
Pepper to taste
Cumin to taste
Chili powder to taste
2 oz • Vinegar
8 each • Cilantro stems • chopped
Add cooked beans and all seasonings to taste. Continue to cook mashing the beans with a spoon.
Step 4
Monterey jack cheese as needed
Top with grated jack cheese before serving.
