|1/4 cup • Butter • melted|
|1 cup • Onion • chopped|
|1 clove • Garlic • minced|
|2 cup • Ground beef|
|1/4 cup • Grated Romano Cheese|
|1/2 cup • Fresh bread crumbs|
|1/4 cup • Parsley • finely chopped|
|2 whole • Eggs|
|kosher salt and pepper to taste|
|1/4 cup • olive oil|
Preheat oven to 350F .
Trim the stems from the peppers and remove seed and membrane. Heat butter over medium low heat and cook onions and garlic until golden. Add beef and cook, stirring for 5 minutes or until cooked through. Add 3 tbsp of the cheese, 3 tbsp bread crumbs, parsley, eggs and salt and pepper to taste.
Fill peppers with mix and sprinkle with remaining cheese and bread crumbs. Arrange peppers on oiled baking dish and drizzle olive oil onto peppers to coat them. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 20 minutes. Serve warm or at room temperature.
